JUST A SPOONFUL OF CORN SYRUP
The holiday season is here and that means caramel apples, chocolate fudge, candy corn, salted caramels, homemade marshmallows and one of my all time favorites pecan pie! What do these wonderful treats have in common? CORN SYRUP. We all know that too much high fructose corn syrup is not good for us, but what about regular corn syrup? Is just a spoonful of corn syrup ok?
Corn syrup also known as glucose sugar is derived from the starches in corn. It can be “light” or “dark.” Light corn syrup has vanilla and salt added. Dark is colored and flavored by molasses plus caramel color, flavor, salt, and the preservative sodium benzoate.
HIGH FRUCTOSE CORN SYRUP
High fructose corn syrup (HFCS) is mostly used in commercially prepared foods. It is created from corn syrup through an enzymatic or now a bioprocess which converts large amounts of glucose into fructose resulting in a much sweeter flavor.
Good old fashion corn syrup sometimes gets a bad wrap and according to the Corn Refiners Association when eaten in moderation High-Fructose Corn Syrup (HFCS) is “fine.”
In my humble Anti-Artificialist opinion; a little bit of this magic ingredient is not the end of the world. Corn syrup provides a soft texture, it keeps sugar from crystalizing, it adds volume to pie fillings and can enhance flavor. Especially for a home chef, corn syrup is incredibly useful.
When cooking from scratch and using a few tablespoons in a recipe a couple times a year, you are using this concentrated sugar in moderation. I think, corn syrup in moderation is all good so, enjoy those homemade salted caramels, and relax.
However, HFCS is found in a ton of our food, and DAILY consumption of food products that have corn syrup or HFCS in them may be dangerous for our health. Foods like; popsicles, soda pop, candy, ice cream, frozen foods and snack foods contain HFCS.
Now, I know what some of you are thinking…we don’t eat junk food, frozen dinners or candy…duh! But, do you eat flavored yogurt, granola bars, energy drinks, breads and store bought baked goods? Do you buy fruit juices, canned fruit, LOW FAT salad dressings? I know most of us eat condiments like barbecue sauce and ketchup. What about breakfast cereals or pancake syrup? Do you let your kids eat these foods? Do you serve these foods to the people that you love?
Our store bought convenience foods are loaded with corn syrup and HFCS. Consider how much of this food additive lurks in your diet. Consider what other sugars have been added to your food. The Anti-Artificialists are here to support you. Live life Unprocessed. It’s really not that hard. :)!
